So last night I stayed up late preparing a Southern Tomato Pie for today. It's in the fridge chilling. Got up early this morning to set out butter and cream cheese to soften, and feed the cats. Taking a little break here before I set to making the buttercream frosting for the Italian Cream Cake I'm making for dessert. I'm also bringing a batch of Tyler Florence's Mustard Mashed Potatoes. These are all new recipes for me, so I'm a little nervous about how they'll turn out.

5 cups flour
1 lb lard
1 egg
1 tbsp white vinegar
Cold water
4 tomatoes (3 if they're large), peeled, sliced 1/8"–¼" thick (thinner is better)
1 cup mozzarella cheese, grated
1 cup Jack cheese, grated
1 cup mayonnaise
6 slices bacon, cooked and crumbled
10 fresh basil leaves, chopped
½ cup chopped green onion
Salt and pepper to taste
Cut the flour and butter together until the butter is in small pieces.
In a 2-cup measuring cup, mix the egg until scrambled. Add the vinegar and mix. Add enough COLD water to make 1 cup.
Make a well in the flour mixture and pour in the egg mixture. Mix well until incorporated. Cut the dough into 2 pieces, wrap with plastic and store in the fridge until cold. Use within 16 hours. (If freezing, roll out and shape to a pie plate first.)
When ready to make the pie, blind bake the crust then set aside.
Layer paper towels onto a cookie sheet. Place the tomato slices on the cookie sheet, sprinkle them with salt, and let drain for 30 minutes.
Set the oven to 350 F.
In a bowl, combine the cheese with the mayo, and mix in the bacon pieces.
Put a layer of the cheese mixture into the bottom of the pie crust. Cover with a layer of tomato slices, then a layer of basil. Repeat the layers, seasoning with salt and pepper, until the pie crust is full.
Bake for 30 minutes, until the crust is browned. (Cover the crust with foil if it gets too brown.)
Let rest AT LEAST 30 minutes before serving.
